Recipe for Homemade Peppermint Patties!!

Hey guys! Meghan here, from Cupcakes with Sprinkles!
As soon as I start thinking about Christmas certain things come to mind, putting up the tree, lights on the house, shopping, gingerbread houses, and peppermint. Peppermint is the taste of the season for me. I think I have so many pepperminty things in the month of December it lasts me all year. Today I am sharing one of my favorite peppermint finds of last year. I never even thought about making my own homemade peppermint patties until I saw how adorable they could be inside. When you need a little peppermint this season, this is what you should make!
Homemade Peppermint Patties!
Gather the things you’ll need…
Put the powdered sugar, corn syrup,water, shortening, and peppermint extract in a mixer and beat until just combined…
Sprinkle the rest of the powdered sugar onto a countertop and take the dough ball out of the mixer and knead until all of the sugar has been mixed in and is smooth…
Take your dough ball, divide it in half and color one of the halves red and leave the other white…
Put the balls in between 2 pieces of parchment and roll very thin. Refrigerate for 5 minutes and then take the parchment paper off of the top of the white and the bottom of the red…
Place the red on top of the white and roll over it with a rolling pin to get out any air pockets and gently roll it up. Freeze for about 2 hours until hard so you are able to slice it without it smashing…
My freezer obviously isn’t as cold as I would’ve liked so my patties have one flat side…
Dip in chocolate and place back in the freezer to quickly harden the chocolate and enjoy!

Homemade Peppermint Patties

2 1/2 cups Powdered Sugar, divided
1 1/2 Tablespoons Corn Syrup
1 1/2 Tablespoons Water
1 1/2 Tablespoons Shortening
1/2 teaspoon Pure Peppermint Extract
8oz Chocolate for dipping

1. In a stand mixer combine the powdered sugar, corn syrup, water, shortening, peppermint extract and using the paddle attachment beat until combined. Sprinkle the remaining 1/4 cup of powdered sugar on a counter top and knead until all of the sugar is blended in.
2. Divide the dough in half and color one of the halves red leaving the other white. Put the balls in between 2 pieces of parchment and roll very thin. Refrigerate for 5 minutes and then take the parchment paper off of the top of the white and the bottom of the red. Place the red on top of the white and roll over it with a rolling pin to get out any air pockets and gently roll it into a log. Freeze for about 2 hours or until hard so you are able to slice it without it smashing.
3. Once frozen slice in less that 1/4inch slices. Dip in chocolate and place back in the freezer to quickly harden the chocolate. Enjoy and Happy Holidays!
