Butterscotch Cookies

Hi! Its Meghan from Cupcakes with Sprinkles! I love being here! I have a cookie for you today that will make your mouth water. It is a butterscotch cookie. A crispy on the outside, chewy, super soft cookie. It has little crispy bits from the heath bar which are awesome. I added chocolate chips because I cant have a cookie without a little chocolate:)

Add the flour mixture to the wet ingredients and mix until just combined. Cover with saran wrap and chill for at least 2 hours. Line a cookie sheet with parchment paper or a silpat mat and scoop 1 1/2 tablespoon size balls onto it. Bake at 350 for about 11 minutes. Let cool on the cookie sheet for 5 minutes before moving to a cooling rack. Enjoy!

Butterscotch Cookies with heath chips!

Butterscotch Cookies

1/2 cup Butter
1/4 cup Granulated Sugar
3/4 cup Brown Sugar
1 small pkg Butterscotch INSTANT Pudding Mix, dry
2 large Eggs
1 large Egg Yolk
1 teaspoon Pure Vanilla Extract
1 teaspoon Butter Extract
1/2 teaspoon Salt
1 teaspoon Baking Soda
2 1/2 cups All-Purpose Flour
1 1/2 cups Heath Toffee Bits
1/2 cup Mini Chocolate Chips

1. In the bowl of a stand mixer cream the sugars and butter.

2. Add in the eggs, pudding, vanilla, and butter extract and beat on medium for 1 minute.

3. In a separate bowl whisk together the flour, salt, and baking powder.

4. Add the flour mixture to the wet ingredients and mix until just combined. Add in the heath pieces and mix in. Cover with saran wrap and chill for at least 2 hours.

5. Line a cookie sheet with parchment paper or a silpat mat and scoop 1 1/2 tablespoon size balls onto it. Bake at 350 for about 11 minutes. Let cool on the cookie sheet for 5 minutes before moving to a cooling rack.

    Question: On your Butterscotch cookies, Is the pudding …….instant or cooking?

    it would be so nice if you put a print recipe option on here so just the recipe could be printed with out all the pictures and add ons and advertising. thanks
