1. In the bowl of a stand mixer cream the sugars and butter.
2. Add in the eggs, pudding, vanilla, and butter extract and beat on medium for 1 minute.
3. In a separate bowl whisk together the flour, salt, and baking powder.
4. Add the flour mixture to the wet ingredients and mix until just combined. Add in the heath pieces and mix in. Cover with saran wrap and chill for at least 2 hours.
5. Line a cookie sheet with parchment paper or a silpat mat and scoop 1½ tablespoon size balls onto it. Bake at 350 for about 11 minutes. Let cool on the cookie sheet for 5 minutes before moving to a cooling rack.
