Hello!! Its Meghan from Cupcakes with Sprinkles! October is my favorite month and pumpkin is one of my favorite flavors… well that and chocolate. So this month I have a yummy recipe for Pumpkin Brownies! It’s soft and the flavors pop. You can taste the rich chocolate and it doesn’t overpower the pumpkin. Its a delicious dessert perfect for the fall. We served it warm with whipped cream which was amazing!
Let’s get the things we need and make us some Pumpkin Brownies!
Preheat oven to 350 degrees and grease a 9×13 pan. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
In a saucepan over medium heat melt the butter. Take off the heat and let the butter cool for 10 minutes then add in the sugar and vanilla. Then beat in the eggs one at a time with a wooden spoon.
Add the butter/sugar mixture to your flour mixture and stir until just combined. Divide the butter into 2 separate bowls. In one bowl add the cocoa powder and chocolate chips and stir to combine.
In another bowl stir in the pumpkin puree, pumpkin pie spice, and cinnamon and stir to combine.
Spread 1/2 of the chocolate batter into your prepared baking dish. Pour all of the pumpkin batter on top. In dollops put the rest of chocolate batter on top and spread around.
Bake for 40-50 minutes or until a toothpick comes out clean. Slop on some whipped cream AND ENJOY!
