Strawberry Snickerdoodle Cheesecake Bars

Hi! It’s Meghan from Cupcakes with Sprinkles! I am so excited to share this Strawberry Snickerdoodle Cheesecake Bars with you today! I have been eating so well most of January and now that its February I am feeling some treats for Valentines Day in my future. I mean, after a couple of good weeks we should treat ourselves, even if I’m not eating healthy I still deserve a treat because I’ve made it through the day. So that means you do too!

Recipe for Strawberry Cheesecake Snickerdoodle Bars
These are snickerdoodle cheesecake bars with cinnamon sugar strawberries in the middle. The cookie is sweet and crunchy, the cheesecake is silky and smooth. The strawberries add in the extra fruity flavor that I love and make it Valentine-y! But they are perfect for anytime of the year!

Ingredients for Strawberry Snickerdoodle Cheesecake Bars {Reality Daydream}

In a large bowl cream the butter and sugar. Add in your egg and vanilla and mix until creamy.

How to make Strawberry Snickerdoodle Cheesecake Bars - a recipe! {Reality Daydream}

 

In a medium bowl whisk the flour, cream of tarter, cinnamon, baking powder, and salt. Combine the wet and dry ingredients and beat to combine. It will be dry but will be able to be pressed together. In a small bowl combine the strawberries, cinnamon, sugar, and cornstarch.

For the cheesecake, combine the cream cheese, sugar, egg, and vanilla. Mix until smooth and creamy. Press half of the cookie dough into a greased 9×9 dish. Spread the cheesecake layer over the top.

Using a slotted spoon, put the strawberries over the cheesecake layer. Crumble the rest of the cookie dough over all of the strawberries. Sprinkle the cinnamon sugar mixture over the dough.

Bake at 350 degrees for 25-30 minutes. Let cool at room temp for an hour and then refrigerate for at least 4 hours before serving.

Ingredients
  • Cookie Layers
  • 6 Tablespoons Butter, room temp
  • ½ cup Granulated Sugar
  • 1 Egg
  • 1½ teaspoons Pure Vanilla Extract
  • 2 cups All-Purpose Flour
  • 1 teaspoon Cream of Tarter
  • 1 teaspoon Cinnamon
  • 1 teaspoon Baking Powder
  • ½ teaspoon Salt
  • Strawberry Layer
  • 1½ cups Strawberries, diced into small pieces
  • 2 Tablespoons Granulated Sugar
  • 1½ teaspoons Cornstarch
  • ½ teaspoon Cinnamon
  • Cheesecake Layer
  • 8 oz Cream Cheese, room temp
  • ½ cup Granulated Sugar
  • 1 Egg
  • 1 teaspoon Pure Vanilla Extract
