Strawberry Graham Icebox Cake Recipe

Hey!! Its Meghan from Cupcakes with Sprinkles! We have spent this summer in Austin, TX for an internship my husband has and it is hot here! So hot! SO I’ve taken to making more desserts that don’t require heating up the oven. This Strawberry Icebox Cake is so simple and tastes delicious. Its sweet, crisp, and creamy. Perfect for hot summer days!

Let get our ingredients…

 

Ingredients for Strawberry Icebox Cake

 

We’ll start by hulling and slice our strawberries. Then in a large bowl whip the heavy cream until soft peaks form. Add in the sugar and vanilla and whip until stiff peaks form…

In a 9×13 pan spread a small dollop of whipped cream evenly over the bottom, and cover the cream with graham crackers…

Cover the graham crackers with 1/3 of your whipped cream mixture and then a layer of strawberries. Repeat with graham crackers, cream, and strawberries until you have 3 layers of each….

Refrigerate for at least 4 hours. Enjoy!

Ingredients
  • 2lbs Strawberries
  • 3 cups Heavy Cream
  • ⅓ cup Granulated Sugar
  • 1 teaspoon Pure Vanilla Extract
  • 4 sleeves Graham Crackers
Instructions
  1. Wash, hull and thinly slice the strawberries. Then in a large bowl whip the heavy cream until soft peaks form. Add in the sugar and vanilla and whip until stiff peaks form.
  2. In a 9×13 pan spread a small dollop of whipped cream evenly over the bottom. Cover the cream with graham crackers. Cover the graham crackers with ⅓ of your whipped cream mixture and then a layer of strawberries. Repeat with graham crackers, cream, and strawberries until you have 3 layers of each. Refrigerate for at least 4 hours. Enjoy!

I used this cutting board to experiment and make some prototypes for a large-scale piece of art I’m doing for our church. It’s got me EXCITED!
