Strawberry Snickerdoodle Cheesecake Bars
  • Cookie Layers
  • 6 Tablespoons Butter, room temp
  • ½ cup Granulated Sugar
  • 1 Egg
  • 1½ teaspoons Pure Vanilla Extract
  • 2 cups All-Purpose Flour
  • 1 teaspoon Cream of Tarter
  • 1 teaspoon Cinnamon
  • 1 teaspoon Baking Powder
  • ½ teaspoon Salt
  • Strawberry Layer
  • 1½ cups Strawberries, diced into small pieces
  • 2 Tablespoons Granulated Sugar
  • 1½ teaspoons Cornstarch
  • ½ teaspoon Cinnamon
  • Cheesecake Layer
  • 8 oz Cream Cheese, room temp
  • ½ cup Granulated Sugar
  • 1 Egg
  • 1 teaspoon Pure Vanilla Extract
  1. Cookie Layers
  2. In a large bowl cream the butter and sugar. Add in your egg and vanilla and mix until creamy.
  3. In a medium bowl whisk the flour, cream of tarter, cinnamon, baking powder, and salt. Combine the wet and dry ingredients and beat to combine. It will be dry but will be able to be pressed together.
  4. Strawberry Layer
  5. In a small bowl combine the strawberries, cinnamon, sugar, and cornstarch.
  6. Cheesecake Layer
  7. Combine the cream cheese, sugar, egg, and vanilla. Mix until smooth and creamy.
  8. Press half of the cookie dough into a greased 9×9 dish. Spread the cheesecake layer over the top.
  9. Using a slotted spoon, put the strawberries over the cheesecake layer. Crumble the rest of the cookie dough over all of the strawberries. Sprinkle the cinnamon sugar mixture over the dough.
  10. Bake at 350 degrees for 25-30 minutes. Let cool at room temp for an hour and then refrigerate for at least 4 hours before serving.
