Butterscotch Pretzel Cookies

Hey! Its Meghan from Cupcakes with Sprinkles! I have a delicious cookie recipe for you today. It’s totally different than the last cookie I shared. This one is soft, thick, chewy, and crunchy. Because of the browned butter it totally tastes like caramel too!
 
Recipe for Butterscotch Pretzel Cookies - with a hint of caramel!

It’s got everything you’ve ever needed in a cookie and its the perfect blend of salty and sweet. So let get making our cookies!

 

Ingredients for Butterscotch Pretzel Cookies

In a small saucepan melt the butter and bring it to a boil. When it starts to boil, swirl the pan. When the foam goes away and the color changes to a deep caramel color remove from the heat. Let it cool for about 20 minutes. Preheat oven to 350 degrees and prepare a cookie sheet with a silpat mat or parchment paper. In a medium bowl combine the flour, baking soda, and salt. Whisk together and set aside.

In the saucepan with your cooled butter add the brown sugar, eggs, and vanilla and stir.

Pour into your flour mixture and stir with a wooden spoon until there are no more streaks of flour. Stir in the butterscotch and chocolate chips, and pretzels.

Make 2 inch round balls and place 2 inches apart on your prepared cookie sheet. Bake for 10-12 minutes or until the edges are golden. Let cool for a few minutes and then move to wire cooling rack.

1 teaspoon Baking Soda
1 teaspoon Coarse Sea Salt
1 1/2 cups Brown Sugar
2 Eggs
2 Teaspoons Pure Vanilla Extract
3/4 cup Butterscotch Chips
3/4 cup Semi Sweet Chocolate Chips
1 cup chopped Pretzels
