Cinnamon Churro Ice Cream Sandwiches

Hey! Its Meghan from Cupcakes with Sprinkles. This month I have a cookie that’s a twist on the churro.
I LOVE summer!! My favorite part of summer is all the city festivals. Mainly for the parades. I love going to parades and I love that my kids are excited about going to parades, even though they are only going for the candy that they throw from the floats:) But along with the parades they also have carnivals and at carnivals you have to get a churro. Cinnamon sugar on the outside of that crispy and chewy dough, its magnificent. These cookies are full of cinnamon sugar and are soft and chewy. With a big scoop of vanilla ice cream in between its a delicious summer dessert!

Let get our ingredients and preheat the oven 350 degrees…

Cream together the butter and sugars until well combined…

Add in the egg, milk, and vanilla. Mix on medium high for about 2-3 minutes…

Beat until light and fluffy…

In a separate bowl whisk flour, baking soda, cinnamon, and salt together…

Cinnamon Churro Cookies made into Ice Cream Sandwiches!
Once the churro cookies have cooled put a scoop of ice cream on a cookie and put one on top and smash together. Enjoy!
Churro Cookie Ice Cream Sandwiches

Churro CookieS Ice Cream Sandwiches

1/2 cup Butter, room temp
1/2 cup Granulated Sugar
1/2 cup Brown Sugar, packed
1 Egg
2 Tablespoons Whole Milk
2 teaspoons Pure Vanilla Extract
2 cups minus 2 Tablespoons All-Purpose Flour
2 Tablespoons Cornstarch
1 teaspoon Baking Soda
1 teaspoon Cinnamon
1/2 teaspoon Salt
1 cup White Chocolate Chips

1. Preheat the oven 350 degrees. Cream together the butter and sugars until well combined. Add in the egg, milk, and vanilla. Mix on medium high for about 2-3 minutes. Beat until light and fluffy.
2. In a separate bowl whisk flour, baking soda, cinnamon, and salt together. Add flour mixture into the butter/sugar mixture. Mix on low until just combined. Gently fold in the chocolate chips.
