Hi! It’s Meghan from Cupcakes with Sprinkles and do I have a fun recipe for you today! Sometimes I buy a bunch of bananas and we’ll eat all but one, so I was trying to figure out what I could do with it and I came across a recipe for an individual mug cake. People you can make a SINGLE SERVING of cake in 5 minutes!!
It’s supposed to be done in a mug but I decided to use a ramekin because I didn’t have a big enough mug (you’ll want a bigger mug cause puffs up while it cooks). This cake is sweet, soft, has great banana flavor, and was so good with a big dollop of vanilla ice cream. The best part is it only cooks for 3 minutes! This may be my new favorite thing!
Just for information’s sake, until recently I didn’t realize you could freeze ripened bananas. You just peel them, put them in a freezer bag, and stick them in the freezer until you are ready to use them. They will look disgusting when they thaw but work great. So you could save your extra ripe bananas and make a big cake if you can wait that long.
Let grab the ingredients and bake a cake!
Place the butter in your mug or ramekin and microwave for about 15 seconds so it melts…
Put in the egg and milk and mix with a fork…
Add in the banana and mix until its combined…
Add in the dry ingredients an mix with your fork until just combined…
Cook in the microwave for 2 minutes and 30 seconds on medium power. If its still gooey in the middle cook in 10 second increments until done. Serve warm with ice cream

- 1 Egg, beaten
- 1 Tablespoon Milk
- 1 Ripened Banana, mashed
- 3 Tablespoons All-Purpose Flour
- 3 Tablespoons Brown Sugar
- ½ teaspoon Baking Powder
