I need to start sharing more of our favorite family recipes here on the blog! I’ve been trying to eat healthier and watch my macros a little. It’s amazing how much more protein we should be eating each day! These chicken fajitas are high in protein and low in fat and carbs, which is AMAZING! But the best part is that they’re so flavorful and delicious. You’d never know they’re good for you too! Even the kids go back for seconds!
First let’s mix together the perfect fajita seasoning mix for the thicken and peppers. The seasoning is what really MAKES this meal! Never underestimate the power of the perfect combo of spices!
In a small bowl, mix together the salt, ground pepper, chili powder, paprika, garlic powder, oregano, and red pepper flakes. Go ahead and take a big whiff and get excited about dinner!
We’re gonna sauté up 3 chopped bell peppers (any colors!) and an onion with half of our seasoning mix.
Set those peppers and onions aside and use the same pan to do the chicken next, using the second half of the fajita seasoning mix. This smells sooooo good. Trust me!
Once that chicken is cooked through, throw the peppers and onions back in and cook till warm, then serve over rice or in a tortilla! You can add cheese, sour cream, or any other add-ons!
Chicken Fajitas
- 1 t. salt
- 1/4 t. ground black pepper
- 2 t. chili powder
- 1 t. paprika
- 1 t. garlic powder
- 1/2 t. oregano
- 1/2 t. red pepper flakes
- 3 bell peppers (any colors!), chopped
- 1 medium onion, chopped
- 2-3 lbs boneless skinless chicken breasts, sliced
- olive oil
In a small bowl, mix together all the seasonings. Heat a drizzle of oil in a large skillet on med-high heat for a couple minutes. Add in the bell peppers, onion, and half the seasoning mix. Cook, stirring often, about 5 mins or until tender. Remove vegetables and add another drizzle of oil. Add chicken slices to the pan, along with the remaining seasoning mix. Fry until chicken is almost fully cooked… about 4 minutes. Return vegetables to skillet and stir-fry everything together for 2-3 minutes, until chicken is fully cooked and veggies are hot.
Serve over tortillas or on a bed of rice!

You can highlight the recipe and copy to a Word doc and save it. That was the easiest for me, I even copied the picture.
