Butterscotch Bars – STAT

Because I don’t often post recipes, you should really take me seriously when I do. If I’m posting a recipe, consider it a matter of extreme urgency.

Now when I was a kid, I loved butterscotch. Everywhere we went it seemed like the 3 common flavors were chocolate, strawberry and butterscotch. But then, mysteriously, butterscotch dropped off the face of the earth, and right out of my life. Dairy Queen has even dropped the flavor completely from their menu.

But my friend Angie must have sensed my silent desperation and made some unbelievable Butterscotch Bars for my wedding shower a few years back. You have to try them. Their ridiculously easy.

I stole this ‘take a picture of ingredients’ trick from Pioneer Woman! Sorry I didn’t include any action stirring shots.  🙂

 Butterscotch Bars

1 yellow cake mix
1 small box ‘cook & serve’ butterscotch pudding
2 eggs
1/3 cup sugar (or less)
6 oz butterscotch chips

Prepare pudding and cool. Add dry cake mix and eggs. Mix well. Pour into 10×15 pan (I don’t have this size, so I use an 11×13 and it works just fine…they’re just thicker!), sprinkle the top with butterscotch chips and sugar. Bake @ 350 for 15-20 minutes!

YUM!

They’re great warm. And for breakfast. The sugar on top gives it a coffee cake quality. A quality that I appreciate.

    to give credit where credit is due….. this recipe is my grandma’s…. who probably got it from some random newspaper article or church cookbook….

    I made these last night and they are so yummy. Thanks for posting the recipe. I love easy to make stuff and this was really easy.

    You don’t know me, I found your blog on craigslist. I was looking at your headboards and they are really cool. You are really creative and talented. I just had to become a follower of your blog. I like the idea so much I started my own blog. I do enjoy reading your post. You seem like a really cool person. Just wanted to pass that along.
