Recipe for Lemon Curd Cookies

Hey! Its Meghan from Cupcakes with Sprinkles! I hope everyone had a wonderful holiday season and you’re still up for a little more baking!  On Christmas Eve every year we get cheesecake from the Cheesecake Factory. I always get the same Oreo one, its amazing. But my husband loves to try different, fruity ones. This year he got the lemon meringue cheesecake. I had one taste of it and it put me in the mood for a lemon dessert and just so I wasn’t making the same lemon meringue pie I did a little research and found these super cute cookies.

Lemon Curd Cookies

Ingredients
To make the curd
  • 2 Lemons, juice and zest
  • ½ cup Granulated Sugar
  • ¼ cup Butter
  • 2 large Eggs
To make the cookies
  • ½ cup Butter, room temp
  • ¼ cup Powdered Sugar
  • 1 Egg Yolk
  • ½ Tablespoon Lemon Zest
  • 1 Tablespoon Lemon Juice
  • ½ teaspoon Salt
  • 1¼ cups All-Purpose Flour
Instructions
To Make the Curd
  1. In a heatproof bowl over a simmering pot of water, combine your granulated sugar, ¼ cup of butter, lemon juice, and lemon zest. Stir until your butter is melted.
  2. Pour in your eggs, whisking constantly. Whisk and then using a wooden spoon, stir until the curd coats the back of your spoon. Stir every few minutes and let sit until room temp, then refrigerate.
To Make the Cookies
  1. Preheat oven to 350 degrees. In the bowl of a stand mixture, cream the butter and sugar together until its light and smooth. Add in the yolk, lemon zest, lemon juice, and salt. Beat together.
  2. Turn the mixer on low and add in the flour until it just comes together. Make into tablespoon sized balls and place on a lined cookie sheet. Press down with your finger in the center of each dough ball.
  3. Bake for 13-15 minutes or until the bottoms are a golden brown. Once the cookies have cooled spoon in about a teaspoon of lemon curd onto the cookies and dust with powdered sugar.

Lemon Curd Cookies recipe
So today we’re making little lemon cookies. They are soft, flaky and not too sweet, kind of biscuit like. They are topped with the most creamy, lemony curd. and just for good measure I sprinkled a little extra powdered sugar on top so they have a little more sweetness. Plus, it totally makes them look cuter:)

Real lemon zest in these Lemon Curd Cookies!

In a heatproof bowl over a simmering pot of water, combine your granulated sugar, 1/2 cup of butter, lemon juice, and lemon zest. Stir until your butter is melted. Pour in your eggs and egg yolk, whisking constantly.

    This recipe tasted good, but the amount of cookies to the amount of curd is very disproportionate. I had enough curd for 3 batches of the cookies.
    Also, I will separate all of the eggs for the curd. The whites tend to cook, and I whisked them before and during the cooking process.
    The curd tasted very good.
