Lava Flow {Guest Post by Cupcakes with Sprinkles}

It’s Meghan from Cupcakes with Sprinkles and I’m so excited to be back!! 
Today I have a sweet, creamy, slushy drink for you to get ready for the warmer weather headed our way. Its strawberry, pineapple, and coconut and you’ll love it!
Now tell me it doesn’t look delicious…
 

 Lets get the things we need…

 

 Pour the strawberry’s and 1/4 cup of water into a blender and puree…

 

 Mix the pineapple juice, cream of coconut, and half and half together…

 

 Wash the blender and then fill halfway up with ice…

 

 Pour the pineapple/coconut mixture up evenly with the ice…
…and puree until smooth and creamy. Then pour about an inch of the strawberry puree in the bottom of a glass and pour the pineapple/coconut mixture into the center of the strawberry puree. Then stir a little and enjoy!!

12oz Frozen Strawberries in sugar, thawed slightly
1/4 cup Water
1 3/4 cups Pineapple Juice
1 – 15oz can Cream of Coconut
1/2 cup Half and Half
Ice

1. Puree the strawberries in a blender with the water. Pour into a liquid measuring cup. In a pitcher, whisk together the pineapple juice, cream of coconut and half-and-half. 
2. Wash the blender so there is no strawberry puree left. Fill the pitcher halfway up with ice. Pour in the pineapple/coconut mixture until it comes up evenly with the ice. Blend until smooth and creamy. 
3. Pour an inch of the strawberry mixture into a cup. Pour the slushy pineapple/coconut mixture into the center of the strawberry mixture until the cup is full. Then gently swirl the mixture with a straw. Serve immediately.

    I’ve made this before (from mels kitchen cafe), it’s yummy, a bit sweet, so adjust accordingly, but yum. 🙂

    OH.MY.GOSH! I need it to be summer, and I need to have a lava flow in my hand while sitting on the patio. This looks like a major dose of awesome!
