Key Lime Bars {Cupcakes w/ Sprinkles}
  • 2 cups Animal Crackers
  • ¼ cup Brown Sugar, packed
  • Pinch of Salt
  • 6 Tablespoons Butter, melted
  • 4oz Cream Cheese, room temp
  • 1 Tablespoon Lime Zest
  • ¼ teaspoon Salt
  • 2 – 14oz cans Sweetened Condensed Milk
  • 2 Egg Yolks
  • 1 cup Key Lime Juice
  • Green Food Coloring
  1. Preheat the oven to 325 degrees. Line a 9×13 pan with tin foil and spray with cooking spray. In a blender or a food processor crush the animal cracker with the brown sugar and salt to fine crumbs. Pour into a bowl and combine with the melted butter, mix well. Press firmly and evenly into the pan and bake for 20 minutes. Set on a wire rack to cool.
  2. Cream together the cream cheese, lime zest, and salt. Add in the sweetened condensed milk and beat until no lumps remain. Lightly whisk in the egg yolks and then gently mix in the key lime juice and food coloring.
  3. Pour the filling over the baked crust and smooth the top. Bake for about 20 minutes until the filling is set. Let cool for 2 hours on a wire rack. Cover with tin foil and refrigerate for at least another 2 hours until cold.
