The BEST (and easiest!) Classic Cinnamon Rolls

Ingredients
  • 6 cups all purpose flour (divided)
  • 2 pkg yeast
  • 1⅛ T baking powder
  • ½ cup sugar
  • 1 T dry milk
  • 1½ t salt
  • ¾ cup shortening
  • 2 eggs
  • melted butter
  • cinnamon sugar mixture
Instructions
  1. Mix together 2 cups flour, yeast, baking powder, sugar, dry milk and salt. Add shortening and mix well. Add 2 cups hot water and mix at medium speed for 2 minutes. Add 1 cup flour and eggs; mix at fast speed for 1 minute. Add 3 cups flour and kneed for 10 minutes. Separate dough in to two separate balls. Roll the first ball out with a rolling pin until approx ¼” thick. Spread melted butter over entire surface, and LIBERALLY sprinkle cinnamon/sugar mixture over the butter. Roll up dough and slice using dental floss and place in a greased 9×13 pan. Leave 1”space around each cinnamon roll. (repeat with second ball of dough). Cover with tea towel and let rise for 10 mins. Bake at 375 for 20 minutes or until golden brown. Check the ones in the center by sticking a fork in to see if it’s still doughy.
  2. I like them best without icing, but sometimes we mix some up by adding a small amount of milk to a cup of powdered sugar. It doesn’t take much milk! Start with a dribble and stir, you can always add more until it’s the perfect consistency. Mix in a splash of vanilla and you’re SET!
